When I read a fight - at a bare minimum, what should I be picking up on?

What should I be reading between the lines?

I would suggest looking for the comments for the swings, blocks, dodges, etc. On Terrabloods website, you should see a list for weapon crits and comments. This will get you down the rabbit hole.
Other than that, I was looking for whether the rhythm was making my gladiator fight till he drops in minute 1 or stand their like a Gorn and eat it.
All those little comments equal some range of values.
The crew on Chatzy will better explain things.

I get it, and I have that list of critical hits by weapons - so a question i have is there such a thing as a 'critical dodge' or a 'critical parry'?

So i am tracking my warriors attacks/hits/crits and number of opponent attacks and hits and number times my warrior either dodges or parries. Also, how many hits to my warrior goes desperate, who has init, first hit, and if the advantage changes - either due to connecting an attack or through dodging/parrying.

prolly overkill? but what the hell - that is one of the better parts of the game.

Here's what I'm looking for when I read fights :

1. Did I win?

2. Did I throw any crit attacks, if running offensively?

3. Did I throw any crit dodges or parries, if running defensively?

4. Did I hit for extra damage ?

I used to track things more finely (i.e. 3 crits / 40 attacks), but now I just build scattergrams, matching rhythms and crit attacks by weapon.

For example, if my warrior threw a LO crit running 10-10, I note the rhythm (VH/VH) and weapon (LO) - and if modified by a tactic, and put a tally mark for each crit. Over the course of several fights, it usually becomes pretty obvious where my warrior is doing better or worse.
